What happens if a young surfer couple decides to build a resort, stumble upon this beautiful spot in the middle of nowhere at Maira-ira Cove, constructs a tastefully east-meets-west design edifice, serve food with ingredients freshly picked from their garden and then regale you with stories in upbeat fashion? That’s Kapuluan Vista Resort for you. We drove hours under the stormy weather during the Lakbay Norte 2 and was glad to find this warm and comfortable place for the night just in time for dinner.

I wasn’t particularly too hungry when we arrived at the resort that’s why the bits of sashimi in oil was a welcome starter. I love sashimi especially if it is as fresh as the ones served here.

The aroma of the Sizzling Seafood somehow woke up my tummy. It was pleasantly chewable and flavorful. A nice diversion while we listen to stories of the young resort owner couple Mike and Alma Oida.

I had a lingering headache while we were on the road from Claveria. I actually wanted to sleep it off and skip dinner but the Cilantro Soup offered welcome relief.  It was almost therapeutic in its flavorful goodness.

The Garden Salad has that sharp yet pleasant sourness in its dressing. The vegetables were crisp and seems to be freshly-picked.

Tender Grilled Fish and Liempo

The main course of Fish and Liempo was also very memorable. The tender grilled fish was subtly-flavored but the tomato salsa was enough to enhance its taste. The liempo (grilled pork belly), however, was a real surprise. The meat was lathered with this white sapid sauce that uniquely complemented the liempo.

For dessert, they gave us a serving each of their Buko Pandan with home made ice cream. I liked it as the vanilla ice cream was not too sweet to overpower the pandan flavor.

For breakfast, friends who have been to this resort recommended that I try their Papas Burritos which I did. The all-vegetable burritos were huge and served by pairs. At first, it looks overwhelming but once I tasted it I knew a piece isn’t enough. The vegetables were crisp and fresh as expected. It doesn’t have pork or beef meat but once it goes down to the gut, what with all those tender potatoes and toppings of cheese and sauce, it was really really good.

Kapuluuan is the kind of resort I expect to see in a tropical setting like Pagudpud, a place that I’m sure nature lovers, surfers or living a bohemian lifestyle would love. That their food is really worth the miles you have to travel to get there is a real incentive to go there and stay there.
